Coconut Cream Parfait With Papaya And Strawberries

Fire up the summertime feels with this creamy vegan parfait from plant-based food blogger, 8th and Lake. Split smoothies and parfaits need to be one of the prettiest ways to drink your breakfast – and we never wheel of seeing these rainbow concoctions as they clog our Instagram feed!

This fiber, folate, vitamin C and beta-carotene packed version is our new favorite for summer (check out all our layered parfait recipes here) and we’ve been topping it off with a sprinkle of homemade granola. Easy, gorgeous, indulgent and deceivingly healthy!
parfaitINGREDIENTS

For the papaya yogurt layer:

  • 4 tbsp coconut yogurt (or any you’d like)
  • 1/2 fresh papaya
  • small squeeze of a lemon

For the papaya smoothie layer:

  • 1/2 fresh papaya
  • 1/2 cup frozen strawberries
  • 1/2 frozen banana
  • 1/2 cup almond milk (or any you’d like)

DIRECTIONS

  1. Start by combining everything from the papaya yogurt coating into the blender until creamy. Remove and arranged this aside for when we coating.
  2. Now blend all the ingredients from the papaya smoothie layer on high speed until creamy.
  3. Now let’s layer. Inside a jar, start by layering a small amount of plain yogurt for your foundation – I like coconut yogurt, but use what you’d like. Then scoop in the papaya yogurt coating on top, next dollop in the papaya smoothie coating and finally top with granola!
